Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until soft and fragrant.
Cook the Soup Base
Add pumpkin, carrot, potato, and zucchini. Stir for 2–3 minutes.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until vegetables are tender.
Blend Until Smooth
Use an immersion blender or transfer soup to a blender. Blend until creamy and smooth.
Add Cream & Seasoning
Stir in cream or coconut milk. Season with salt and pepper. Heat gently, but do not boil.
Serve
Ladle into bowls and garnish with fresh herbs if desired. Enjoy warm!
