Sticky Sweet Chocolate Chip Energy Balls

Process Dates and Oats
In a food processor, pulse the dates until they form a sticky paste. Add the oats and pulse a few more times until combined but still slightly chunky.

Add Wet Ingredients
Add almond butter, honey, vanilla extract, and salt. Process until the mixture is well combined and sticky.

Mix in Chocolate Chips
Transfer mixture to a bowl and fold in the mini chocolate chips (and chia or flaxseed if using).

Form Balls
Scoop about 1 tablespoon of mixture and roll into balls using your hands. Repeat with the remaining mixture.

Chill
Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
