Season chicken breasts with salt, pepper, and paprika.
Sear the Chicken:
Heat olive oil or butter in a large skillet over medium-high heat. Brown the chicken on both sides until golden (about 4-5 minutes per side). Remove and set aside.
Cook Aromatics:
In the same skillet, sauté onion and garlic until soft and fragrant.
Make the Sauce:
Stir in flour (if using) and cook for 1 minute. Gradually add chicken broth, stirring constantly to avoid lumps.
Add Sour Cream and Herbs:
Reduce heat to low. Stir in sour cream and thyme until smooth. Return chicken to the skillet, coating with sauce.
Simmer:
Cover and simmer on low heat for 10-15 minutes until chicken is cooked through and sauce thickens.
Garnish and Serve:
Sprinkle fresh parsley on top before serving.
