Cook lo mein noodles according to package instructions. Drain, rinse with cold water, and set aside.
Prepare the Sauce:
In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce (if using), sesame oil, and cornstarch slurry. Set aside.
Stir-Fry the Vegetables and Turkey:
In a large skillet or wok, heat vegetable oil over medium-high heat. Add garlic and ginger, cook for 30 seconds. Add bell pepper, carrots, and snow peas. Stir-fry for 2–3 minutes until just tender.
Add Turkey and Sauce:
Stir in the cooked turkey and pour in the sauce. Cook for another 2 minutes, stirring to coat everything well and heat the turkey through.
Toss with Noodles:
Add the cooked noodles and green onions to the skillet. Toss everything together until heated through and evenly coated.
Serve:
Remove from heat and serve immediately, garnished with extra green onions or sesame seeds if desired.
