Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
Mix Dry Ingredients
In a large bowl, combine oats, chopped pistachios, and sea salt.
Add Wet Ingredients
Stir in maple syrup (or honey), melted coconut oil, and vanilla extract until everything is well coated.
Press and Bake
Transfer the mixture to the prepared pan. Press down firmly to compact evenly. Bake for 20–25 minutes until golden and set.
Cool and Cut
Let cool completely before slicing into squares.
