Jerk Chicken: A Fiery Caribbean Classic Bursting with Flavor

In a blender or food processor, combine Scotch bonnet peppers, garlic, onion, thyme, allspice, cinnamon, nutmeg, brown sugar, soy sauce, olive oil, lime juice, salt, black pepper, green onions, and ginger. Blend until smooth.

Marinate the Chicken:
Place chicken pieces in a large bowl or resealable plastic bag. Pour marinade over chicken and massage to coat evenly. Cover and refrigerate for at least 4 hours, preferably overnight for deeper flavor.

Cook the Chicken:

Grill method: Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side until cooked through and charred in spots.

Oven method: Preheat oven to 375°F (190°C). Place chicken on a baking sheet and bake for 35-40 minutes, turning once halfway through.

Rest and Serve:
Let chicken rest for 5 minutes before serving to lock in juices.
