Fluffy Jamaican Coco Bread

In a small bowl, combine the warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.

Mix the Dough
In a large mixing bowl, combine flour and salt. Add the yeast mixture, warm coconut milk, beaten egg, and melted butter. Mix until a soft dough forms.

Knead and Rise
Turn the dough out onto a floured surface and knead for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.

Shape the Bread
Punch down the dough and divide into 8–10 equal portions. Roll each piece into a ball, then flatten into a ¼-inch thick circle. Brush one side lightly with melted butter and fold in half to form a half-moon. Place on a greased baking sheet.

Second Rise
Cover loosely with a clean towel and let rise for another 15–20 minutes while you preheat the oven to 350°F (175°C).

Bake and Finish
Bake for 15–18 minutes, or until lightly golden. Immediately brush with more melted butter after removing from the oven.
