Classic Caribbean Curry Goat

In a large bowl, toss goat meat with curry powder, all-purpose seasoning, black pepper, paprika, and ground ginger. Cover and let marinate for at least 1 hour, preferably overnight in the refrigerator.

Brown the Meat
Heat vegetable oil in a heavy pot over medium heat. Add goat meat and brown on all sides, about 8-10 minutes.

Sauté Aromatics
Add chopped onion, garlic, scallions, thyme, and Scotch bonnet pepper. Cook for 3-5 minutes until onions soften.

Add Tomato Paste and Liquid
Stir in tomato paste, then add water or broth. Bring to a boil.

Simmer
Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until goat meat is tender. Add potatoes about 30 minutes before the end of cooking if using.

Adjust Seasoning
Taste and adjust salt or seasoning as needed.
