Toss the chicken pieces with curry powder, salt, and pepper. Let marinate for at least 30 minutes.
Brown the Chicken
Heat oil in a large pot over medium heat. Add chicken and brown on all sides.
Sauté Aromatics
Add onions, garlic, scallions, thyme, and Scotch bonnet pepper. Cook until onions soften, about 5 minutes.
Add Tomato Paste and Liquid
Stir in tomato paste, then add water or broth. Bring to a boil.
Simmer
Reduce heat to low, cover, and simmer for 45 minutes to 1 hour until chicken is tender. Add potatoes halfway through if using.
Adjust Seasoning and Serve
Taste and add more salt or pepper if needed. Serve hot with rice or your choice of sides.
