Chewy Homemade Peanut Butter Chocolate Granola Bars

Prepare the Pan
Line an 8x8-inch or 9x9-inch baking dish with parchment paper, leaving overhang on the sides for easy lifting.

Heat Wet Ingredients
In a small saucepan over low heat, combine peanut butter and honey. Stir until smooth and warm, then remove from heat. Stir in vanilla extract and salt.

Mix Dry and Wet Ingredients
In a large mixing bowl, add rolled oats (and any optional nuts, fruit, or seeds). Pour the warm peanut butter mixture over the oats and stir to combine. Let the mixture cool slightly before folding in the chocolate chips to prevent melting.

Press and Chill
Press the mixture firmly and evenly into the prepared baking dish. Use the back of a spatula or your hands to compress tightly.

Set and Slice
Chill in the refrigerator for at least 1–2 hours, or until firm. Once set, lift out using the parchment and slice into bars or squares.
