Beef Tenderloin Roast: Elegant and Juicy Centerpiece for Any Occasion

Preheat your oven to 425°F (220°C).

Prepare the Tenderloin:
Pat the beef tenderloin dry with paper towels. Rub the olive oil all over the roast.

Season:
Mix garlic, rosemary, thyme, salt, and pepper. Rub this herb mixture evenly over the beef. Optionally, spread Dijon mustard on the roast before adding herbs for extra flavor.

Roast:
Place the beef on a roasting rack inside a baking pan. Roast in the preheated oven for 20 minutes, then reduce temperature to 350°F (175°C) and continue roasting until an instant-read thermometer reads 130°F (54°C) for medium-rare, about 20-25 more minutes.

Rest:
Remove roast from oven and tent loosely with foil. Let rest for 15 minutes before slicing.
