Using a spoon or piping bag, drop or pipe small mounds (about 1½ inches in diameter) onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 15 minutes at 400°F, then reduce oven temperature to 350°F (175°C) and bake for another 20-25 minutes until puffed and golden brown.
Do not open the oven during baking to prevent collapse.
Remove from oven and prick each puff with a toothpick to release steam. Cool completely on a wire rack.
Fill the Cream Puffs:
Once cooled, slice the cream puffs in half horizontally or make a small slit on the side.
Fill generously with Mom’s Famous Filling or your chosen filling using a spoon or piping bag.
