Prepare the dough:
In a mixing bowl, combine flour, baking powder, salt, and vanillin.
Add softened butter, sour cream, and egg yolk. Mix and knead until you get a smooth dough. Cover and let it rest for 15–20 minutes.
Make the filling:
In a separate bowl, beat the egg white until frothy.
Add sugar and vanilla sugar, mixing well.
Fold in the chopped walnuts until evenly combined.
Assemble the rolls:
Roll out the dough on a floured surface into a rectangle about 1 cm thick.
Spread the walnut filling evenly over the dough.
Roll the dough tightly into a log.
Slice the log into rolls about 2–3 cm thick.
Bake:
Place the rolls on a greased or parchment-lined baking tray, spaced slightly apart.
Bake in a preheated oven at 180°C (350°F) for 20–25 minutes or until golden brown.
Cool and serve:
Let the rolls cool slightly before serving. Enjoy warm or at room temperature.
