Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible to prevent soggy balls.
In a mixing bowl, combine the grated zucchini, egg, breadcrumbs, grated cheese, chopped parsley, and a pinch of salt. Mix well until the mixture holds together.
Shape the mixture into small balls, about 1 to 1.5 inches in diameter.
Heat a generous amount of olive oil in a frying pan over medium heat.
Fry the zucchini balls in batches, turning occasionally, until golden brown and crispy on all sides (about 3-4 minutes per side).
Remove and drain on paper towels to absorb excess oil.
