Sweet Potato Pineapple Upside Down Donut Rings: A Tropical Twist on a Classic Treat

Preheat your oven to 350°F (175°C). Grease a donut ring pan with butter or oil.

In a large bowl, mix the mashed sweet potatoes, all-purpose flour, and baking powder until you have a smooth, thick batter.

Arrange pineapple rings in the bottom of each donut mold. If desired, sprinkle a little brown sugar over the pineapple for extra caramelization.

Spoon the sweet potato batter over the pineapple rings, filling each donut cavity evenly.

Bake for 20–25 minutes or until the donuts are cooked through and a toothpick inserted comes out clean.

Allow the donuts to cool slightly before carefully removing them from the pan to reveal the pineapple upside down topping.
