Healthy 5-Minute Oatmeal Apple & Banana Pancakes

In a mixing bowl, combine oatmeal, ricotta cheese, egg, water (or milk), vanilla, and stevia. Stir well until you get a smooth batter.

Fold in the diced apples and mashed banana.

Heat a non-stick skillet over medium heat and lightly grease with vegetable oil.

Pour batter in small portions (about 1/4 cup each) to form pancakes.

Cook for 2–3 minutes on one side until bubbles form on the surface, then flip and cook for another 2 minutes until golden and cooked through.

Repeat with the remaining batter, adding oil as needed.
