Ingredients:

3 medium potatoes

1 onion

2 zucchinis

4 large eggs

100 g feta cheese

250 g (9 oz) all-purpose wheat flour

How to Make:

Preheat your oven to 180°C (350°F). Grease a baking dish or line it with parchment paper.

Peel and grate the potatoes and onion. Grate the zucchinis as well, then squeeze out any excess moisture using a clean kitchen towel.

In a large bowl, combine the grated potatoes, onion, and zucchini.

Add the eggs and crumbled feta cheese to the vegetable mixture and stir well to combine.

Gradually add the wheat flour, mixing until you get a thick batter that holds together but isn’t too dry. Add a pinch of salt and pepper if desired.

Transfer the mixture to the prepared baking dish, spreading it evenly and pressing down gently.

Bake in the preheated oven for 35–40 minutes, or until the top is golden and the center is set.

Remove from the oven and let cool slightly before slicing and serving.
