Peel (optional) and cut the potatoes into fries of your desired thickness.
Rinse the cut potatoes in cold water to remove excess starch; then pat them dry thoroughly.
Toss the potatoes with 2 tablespoons of cornstarch until evenly coated. This helps create a crispy crust.
Preheat oil in a deep fryer or a heavy pan to 350°F (175°C), or preheat your oven to 425°F (220°C) if baking.
Fry the potatoes in batches until golden and crispy, about 4-5 minutes per batch, or bake on a lined baking sheet for 25-30 minutes, turning halfway through.
While still hot, sprinkle your favorite spices and salt over the fries and toss gently to coat.
Serve immediately with ketchup, mayo, or your preferred dipping sauce.
