Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish with butter or nonstick spray.
Mix the wet ingredients: In a large bowl, whisk together the eggs, melted butter, sugar, milk, and vanilla extract until well combined.
Add the dry ingredients: Stir in the flour and salt, whisking until smooth.
Fold in the coconut: Gently stir in the shredded coconut until evenly distributed throughout the batter.
Pour and bake: Pour the batter into the prepared pie dish. The mixture will be very liquid—that’s okay! Bake for 45–55 minutes, or until the top is golden brown and the center is set (a slight jiggle is fine).
Cool: Allow the pie to cool completely at room temperature to finish setting. Chill for at least 2 hours for cleaner slices.
