Cheesy Taco Potatoes: A Flavor-Packed, Comforting One-Pan Meal

Preheat your oven to 400°F (200°C).

In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.

Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, turning halfway through, until golden and tender.

While the potatoes roast, heat a skillet over medium-high heat. Add the ground beef, season with salt and pepper, and cook until browned and cooked through, breaking it up with a spoon as it cooks. Drain excess fat.

Once the potatoes are done, transfer them to an oven-safe dish. Mix the cooked ground beef evenly with the potatoes.

Sprinkle shredded cheddar cheese generously over the top.

Return the dish to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.

Remove from the oven and garnish with your favorite toppings like green onions, sour cream, salsa, or cilantro.
