In a blender or food processor, combine the banana, eggs, oats, baking powder, vanilla extract, and salt. Blend until smooth and slightly thick.
Let the batter rest for 2–3 minutes to thicken slightly.
Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
Pour 2–3 tablespoons of batter per pancake into the skillet. Cook for 2–3 minutes, until bubbles form on the surface.
Flip and cook for another 1–2 minutes, until golden and cooked through.
Serve warm with your favorite toppings.
