Activate the Yeast:
In a large bowl, mix warm water (not hot), sugar, and yeast. Stir gently and let sit for 10 minutes until foamy.
Mix the Dough:
Add flour and salt to the bowl. Stir with a spoon or spatula until a rough dough forms. Add olive oil and continue mixing until the dough comes together.
First Rise:
Cover the bowl with a towel or plastic wrap. Let the dough rise in a warm place for about 1 hour, or until doubled in size.
Shape the Dough:
Lightly flour your hands and a surface. Turn the dough out, shape into a loaf or round, and place on a parchment-lined baking tray or in a loaf pan.
Second Rise:
Let the shaped dough rest for another 20–30 minutes while the oven preheats.
Bake:
Preheat your oven to 180°C (350°F). Bake the bread for 25–30 minutes, or until golden brown and it sounds hollow when tapped on the bottom.
Cool:
Let the bread cool for at least 15 minutes before slicing.
