Preheat Oven and Prepare Pan:
Preheat your oven to 180°C (350°F). Grease and flour a 9x13 inch baking dish or line with parchment paper.
Beat Eggs and Sugar:
In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy.
Add Liquids:
Slowly add the vegetable oil and milk, mixing until well combined. Add vanilla extract if using.
Mix Dry Ingredients:
In a separate bowl, whisk together flour and baking powder. Gradually add to the wet mixture, stirring gently to form a smooth batter.
Prepare Apples:
Toss the sliced apples with ground cinnamon.
Assemble:
Pour half the batter into the prepared pan. Arrange half of the apple slices evenly over the batter. Pour the remaining batter on top, spreading gently to cover. Finish by layering the remaining apple slices on top.
Bake:
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean and the apples are tender.
Cool and Serve:
Allow the pie to cool slightly before dusting with powdered sugar and serving.
