Prepare the Ginger:
Peel the fresh ginger root and slice it thinly.
Boil the Water:
Bring 4 cups of water to a boil in a pot.
Simmer Ginger:
Add the sliced ginger to the boiling water.
Reduce heat and simmer for 10-15 minutes.
Strain and Flavor:
Strain the ginger water into a pitcher.
Add lemon juice and honey if desired. Stir well.
