Delicious Vegan Lentil Patties: High-Protein, Easy, and Flavorful

Cook Lentils:

Rinse lentils well.

Cook in boiling water for about 15 minutes until soft but not mushy. Drain and let cool slightly.

Prepare Veggies:

Sauté diced onion and minced garlic in a little oil until softened.

Mix Ingredients:

In a large bowl, combine cooked lentils, sautéed onion and garlic, grated carrot, tomato paste, chickpea flour, curry powder, chili flakes (if using), and salt. Mix thoroughly.

Form Patties:

Shape mixture into small patties (about the size of your palm).

Cook Patties:

Heat a non-stick skillet over medium heat with a little oil.

Cook patties for 3-4 minutes on each side until golden brown and crispy.

Garnish and Serve:

Sprinkle chopped parsley or cilantro on top. Serve warm.
