Preheat oven: Set your oven to 425°F (220°C).
Prepare potatoes: Scrub potatoes thoroughly and pat dry.
Pierce skin: Use a fork to prick each potato several times to allow steam to escape.
Oil and season: Rub each potato with olive oil, then sprinkle generously with salt and a little black pepper.
