Zesty Ginger-Lemon Vinaigrette for Fresh Salads

In a medium bowl or a mason jar with a lid, combine lemon juice, Dijon mustard, honey, grated ginger, salt, and black pepper.

Slowly whisk in olive oil until the dressing is fully emulsified. (If using a jar, simply shake well for about 30 seconds until blended.)

Taste and adjust salt, pepper, or lemon juice to your liking.

Use immediately or refrigerate for later.
