Preheat Oven and Prepare Baking Sheet:
Preheat your oven to 400°F (200°C). Lightly grease or line a baking sheet with parchment paper.
Coat the Chicken:
Season the chicken pieces with salt and pepper. Dip each piece into flour, then beaten eggs, and finally coat with panko breadcrumbs.
Bake the Chicken:
Arrange the coated chicken pieces in a single layer on the baking sheet. Lightly spray or drizzle with oil. Bake for 20–25 minutes, flipping halfway, until golden and cooked through.
Make the Sauce:
While chicken bakes, whisk together ketchup, vinegar, brown sugar, soy sauce, and garlic powder in a small saucepan. Bring to a simmer over medium heat. Stir in the cornstarch slurry and cook until sauce thickens, about 2 minutes.
Combine and Serve:
Once the chicken is done, toss it gently in the sweet and sour sauce to coat evenly. Serve immediately over steamed rice with your favorite veggies.
