Fresh Pickled Cucumber Salad: Crisp, Tangy, and Perfectly Spiced

Combine the veggies: In a large mixing bowl, gently toss the thinly sliced cucumbers and onions together.

Make the brine: In a small saucepan over medium heat, combine vinegar, water, sugar, salt, black pepper, garlic powder, and red pepper flakes (if using). Stir occasionally until sugar and salt dissolve and the mixture simmers gently.

Pour & mix: Remove the brine from heat and carefully pour it over the cucumber and onion mixture. Stir well to coat everything evenly.

Cool and chill: Allow the mixture to cool to room temperature. Transfer to glass jars or airtight containers (makes about 2 quarts). Refrigerate for at least 4 hours, preferably overnight, to develop flavor.
