Hard Egg Drinks — A Simple Homemade Potato Infusion

Peel and chop the potatoes into large chunks.

Place potatoes in a large pot and cover with water. Add a pinch of salt.

Bring to a boil over high heat, then reduce to a simmer. Cook until potatoes are very soft, about 20-30 minutes.

Using a potato masher or immersion blender, mash or blend the potatoes in the water to create a thick, creamy broth.

Adjust salt to taste.

Strain if desired for a smoother texture.

Serve warm in small cups or mugs.
