Place the diced potatoes and onions in a large pot and cover with enough water to submerge them fully.
Add the chicken bouillon cubes to the pot. Bring to a boil over medium-high heat.
Reduce heat and simmer until the potatoes are tender, about 15–20 minutes.
Use a potato masher or immersion blender to mash or blend the potatoes slightly, leaving some chunks for texture.
Stir in the milk and heat gently, but do not boil, until warmed through.
Season with salt and pepper to taste.
Serve hot with your choice of optional toppings.
