Peel and boil the potatoes until tender. Drain and mash until smooth. Set aside.
Cook the spinach:
In a pan, sauté the chopped onion and minced garlic until translucent.
Add the spinach and cook until wilted. Drain excess liquid.
Mix the filling:
In a bowl, combine the cooked spinach mixture with the egg, Parmesan, and half of the grated cheese. Mix well.
Assemble:
Preheat the oven to 180°C (350°F).
In a baking dish, spread half of the mashed potatoes evenly.
Layer the spinach-cheese mixture over the potatoes.
Top with the remaining mashed potatoes. Sprinkle the rest of the grated cheese on top.
Bake:
Bake for about 25–30 minutes until the top is golden and bubbly.
