Sicilian Whole Orange Cake

Preheat oven: to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan.

Prepare orange: Slice the orange into quarters, remove any seeds, and blend the whole orange (with peel) in a food processor or blender until smooth.

Mix wet ingredients: In a large bowl, whisk the eggs and sugar together until light and fluffy.

Add oil and orange puree: Slowly add olive oil and blended orange, mixing until combined.

Combine dry ingredients: In another bowl, sift together flour, baking powder, and salt.

Fold dry into wet: Gradually add dry ingredients into the wet mixture, folding gently until just combined.

Bake: Pour batter into prepared pan and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

Cool: Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
