Ingredients (serves 8)
1 whole orange (medium-sized, unpeeled, seeds removed)
3 large eggs
1 cup granulated sugar
1/2 cup olive oil (or vegetable oil)
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
Optional Glaze or Topping:
Powdered sugar for dusting
Orange zest glaze (mix powdered sugar with a bit of fresh orange juice)
