Prepare the potatoes:
Peel and boil the potatoes until tender. Drain and mash until smooth, then let cool slightly.
Make the dough:
In a bowl, mix the mashed potatoes with eggs, yogurt, flour, and baking powder until you get a soft dough. The dough should be slightly sticky but workable.
Prepare the vegetables:
Slice the purple onion and red pepper thinly. Grate the mozzarella cheese.
Form the pizza base:
On a lightly floured surface, roll out the potato dough into a round or rectangle about 1 cm thick. Transfer to a baking sheet lined with parchment paper.
Assemble the pizza:
Evenly distribute the sliced onions and red peppers over the dough. Sprinkle the grated mozzarella cheese generously on top.
Bake:
Preheat the oven to 200°C (390°F). Bake the pizza for 20-25 minutes or until the cheese is melted and golden, and the edges of the dough are cooked through.
Serve:
Remove from the oven and let cool for a few minutes before slicing. Serve warm.
