1️⃣ Roast the Chicken:
Preheat oven to 400°F (200°C).
Rub chicken pieces with olive oil and season with garlic powder, paprika, thyme, onion powder, salt, pepper, and chili flakes if using.
Place on a baking tray and roast for 35–40 minutes until golden and crispy.
2️⃣ Bake the Sweet Potato:
Wash and halve the sweet potato.
Place cut side up on a baking tray, season with salt and pepper, and optionally brush with butter or olive oil.
Bake for 30–35 minutes until soft and tender.
3️⃣ Prepare the Salad:
In a large bowl, combine lettuce, cucumber, tomato, onion, and carrots.
Drizzle with olive oil and lemon juice. Season with salt and pepper. Toss gently.
4️⃣ Assemble & Serve:
Plate the roasted chicken with the baked sweet potato and a generous helping of fresh salad. Serve warm and enjoy!
