Place peeled and chopped potatoes in a large pot of salted water. Bring to a boil and cook until tender (about 15 minutes). Drain well.

Prepare Mashed Potatoes:
Mash the cooked potatoes with butter and milk (or cream) until smooth and creamy. Season with salt and pepper to taste.

Cook the Onion:
Heat olive oil in a pan over medium heat. Add the finely chopped onion and sauté until soft and translucent (about 5 minutes). Set aside.

Assemble the Pie Filling:
In a large mixing bowl, combine the mashed potatoes, sautéed onions, diced ham, and shredded cheddar cheese. Mix gently until evenly combined.

Bake the Pie:
Preheat your oven to 180°C (350°F). Transfer the mixture into a greased baking dish and spread evenly. Bake uncovered for 25-30 minutes, or until the top is golden and the cheese is bubbly.

Serve:
Let the pie rest for a few minutes before serving. Enjoy warm!

Tips
For extra flavor, add a pinch of nutmeg or mustard to the mashed potatoes.

You can substitute ham with cooked bacon or turkey.

Add some chopped herbs like parsley or chives for freshness.
