In a bowl, mix honey, soy sauce, vinegar, mustard, garlic, paprika, and pepper. Set aside.
2. Prep the Ribs:
Preheat oven to 160°C (325°F).
Rub the ribs with salt and vegetable oil.
Place ribs on a baking tray lined with foil and cover with foil.
Bake for 1.5 hours until tender.
3. Glaze and Roast:
Remove foil, brush ribs with half of the glaze.
Return to oven uncovered at 200°C (400°F) for 15 minutes.
Brush again with remaining glaze and roast for another 10 minutes.
4. Roast Vegetables:
While ribs cook, toss vegetables with olive oil, salt, pepper, and herbs.
Spread on a baking sheet and roast at 200°C (400°F) for 30–35 minutes, flipping halfway.
