Prepare the shrimp and vegetables
Pat the shrimp dry. Wash and cut the asparagus and slice the mushrooms.
Stir-fry garlic and shrimp
In a large skillet or wok, heat 1 tablespoon olive oil over medium-high heat. Add garlic and stir for 30 seconds. Add shrimp, season with a little salt and pepper, and stir-fry for 2–3 minutes until pink and opaque. Remove and set aside.
Cook vegetables
Add the remaining olive oil to the pan. Stir-fry mushrooms for 2 minutes, then add asparagus. Cook for another 4–5 minutes, or until vegetables are tender-crisp.
Combine and glaze
Return shrimp to the pan. Add soy sauce and lemon juice. Stir well and heat for 1–2 more minutes until everything is coated and hot.
