In a bowl, mix the beef slices with baking soda and water. Let sit for 5 minutes. This will tenderize the meat.
Marinate:
Add soy sauce, oyster sauce, sugar, and cornstarch to the beef. Stir well and let it marinate for another 5 minutes while you prep the veggies.
Cook the Beef:
Heat 1-2 tablespoons of oil in a large skillet or wok over high heat. Add the marinated beef and stir-fry until browned and cooked through, about 3-4 minutes. Remove beef and set aside.
Sauté Vegetables:
In the same pan, add a little more oil if needed. Sauté sliced onions until translucent and slightly caramelized, about 2 minutes. Then add green onions and stir briefly.
Combine:
Return the beef to the pan, add the cooked noodles, and toss everything together for 1-2 minutes until heated through and well mixed. Adjust seasoning with extra soy sauce if desired.
