In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
Place chicken in a resealable bag or shallow dish and pour marinade over it. Marinate in the fridge for at least 30 minutes (up to 2 hours).
Preheat oven to 375°F (190°C).
Remove chicken from marinade and place in a baking dish. Discard the leftover marinade.
Bake for 25–30 minutes, or until chicken is cooked through (internal temperature of 165°F / 75°C).
Let rest for 5 minutes, then slice.
Garnish with chopped parsley and lemon slices.
