Weekend Veggie Casserole: Cauliflower & Broccoli Bake

Preheat oven to 200°C (390°F).

Rinse and cut the cauliflower and broccoli into florets.

In a large bowl, toss the vegetables with olive oil, curry powder, salt, and pepper.

Spread evenly in a baking dish or tray.

Roast in the oven for 25–30 minutes, stirring once halfway, until golden and tender.

Serve warm as a side dish or pair with rice, grains, or a protein of your choice.
