Place eggs in a single layer in a saucepan and cover them with cold water, about an inch above the eggs.

Optionally, add a teaspoon of baking soda or a splash of vinegar to the water—both help loosen the shell.

Bring the water to a rolling boil over medium-high heat.

Once boiling, turn off the heat, cover the pot, and let the eggs sit for 10-12 minutes.

Prepare an ice bath by filling a bowl with cold water and ice cubes.

Immediately transfer the eggs to the ice bath to stop cooking and cool for at least 5 minutes.

To peel, gently tap the egg on a hard surface, then roll it lightly to crack the shell all over.

Start peeling from the wider end where the air pocket usually makes it easier to get under the shell.
