Stuffed Baked Potatoes with Smoked Chicken and Cheese

Preheat oven to 400°F (200°C).

Wash potatoes thoroughly and dry. Prick each potato several times with a fork. Rub them with sunflower oil, salt, and pepper.

Place potatoes on a baking tray and bake for about 45-60 minutes, until tender when pierced with a fork.

Remove from oven and let cool slightly. Cut each potato in half lengthwise and carefully scoop out the flesh into a bowl, leaving a thin shell.

Mash the scooped potato lightly and mix with smoked chicken, cheese, onion, garlic, mayonnaise, herbs, salt, and pepper.

Spoon the filling back into the potato shells, mounding it slightly.

Place stuffed potatoes back on the baking tray and bake for another 15-20 minutes, until cheese melts and tops are golden.

Serve warm, garnished with extra herbs if desired.
