Preheat the oven to 175°C (350°F). Line a baking tray with parchment paper.
Mix ingredients: In a large bowl, mash the bananas. Stir in oats, nuts, cinnamon, vanilla, and any optional ingredients. Mix well.
Shape cookies: Scoop spoonfuls of the mixture onto the tray and flatten slightly with the back of a spoon.
Bake for 15–18 minutes, or until golden and set.
Cool completely before serving.
