Quick and Delicious Breakfast Tortilla Wraps

Crack the eggs into a bowl, add salt and pepper, then whisk thoroughly until combined.

Heat a non-stick skillet over medium heat and lightly grease if needed. Pour in the eggs and cook gently, stirring occasionally to scramble until just set but still soft.

Warm the tortillas briefly in the skillet or microwave until pliable.

Divide the scrambled eggs evenly between the two tortillas.

Sprinkle chopped green onions and shredded mozzarella over the eggs.

Roll up the tortillas tightly to form wraps. If desired, place the wraps back in the skillet for a minute on each side to melt the cheese and slightly crisp the tortillas.

Serve immediately while warm.
