Soak the dates in warm water for 5–10 minutes if they are dry, then drain.
In a food processor, pulse the oats and walnuts until finely ground.
Add the dates, cinnamon, salt, and orange zest. Process until the mixture forms a sticky dough that holds together when pressed.
Scoop out small portions and roll into balls (about 2.5 cm or 1 inch in diameter). Place them on a parchment-lined tray.
In a small saucepan or microwave-safe bowl, gently melt the chocolate with the olive oil until smooth.
Dip or drizzle the chocolate over the date balls, then let them set in the fridge for at least 30 minutes.
