Homemade Pickled Garlic Cloves

Wash jars and lids with hot, soapy water. Rinse well. Sterilize by boiling them in water for 10 minutes or use a hot dishwasher cycle.

Prepare the Garlic:
Peel the garlic cloves. (Optional: blanch cloves in hot water for 20–30 seconds to ease peeling.)

Make the Brine:
In a saucepan, combine vinegar, water, salt, and sugar. Bring to a boil, stirring until salt and sugar dissolve. Remove from heat.

Pack the Jars:
Place garlic cloves into sterilized jars. Add peppercorns, mustard or coriander seeds, and bay leaves if using.

Add Brine:
Pour hot brine over garlic cloves, covering them completely. Leave about 1 cm (½ inch) of headspace.

Seal:
Wipe rims clean and seal jars tightly with lids.

Cool and Store:
Let jars cool to room temperature, then refrigerate.
