Grandma’s Favorite Beet and Carrot Salad

1 large beetroot (grated raw or boiled and chopped)

1 large carrot (grated)

1 tablespoon olive oil

Juice of ½ lemon

1 teaspoon honey (optional)

Salt and black pepper to taste

Instructions
Prepare the beetroot: peel and either grate raw or boil until tender and chop.

Peel and grate the carrot.

In a mixing bowl, combine the beetroot and carrot.

Drizzle with olive oil and lemon juice.

Add honey if you prefer a touch of sweetness.

Season with salt and black pepper to taste.

Toss everything gently to mix well.

Serve fresh as a side salad or use it as a base for a healthy juice blend.
