Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes until smooth.
Carefully stir in the boiling water. The batter will be thin—this is normal and ensures a moist texture.
For added richness, fold in sour cream or Greek yogurt at this stage (optional).
Divide the batter evenly between the prepared pans.
Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then remove and transfer to wire racks to cool completely.
